SWISS is launching a new round of its ”SWISS Taste of Switzerland” dining concept. From September 2, menus from the Michelin-starred restaurant Villa Sommerlust in Schaffhausen will be served on board long-haul flights from Zurich and Geneva.
The initiative will run for three months and primarily covers First and Business Class. The menus have been developed by Alejandro Perez Polo, Dan Rodriguez Zaugg and Katiuska Villalba Paredes from Villa Sommerlust.
The restaurant is located on the Rhine near Schaffhausen's old town and is, according to SWISS, the only Michelin-starred restaurant in the canton. For the airline, the chefs have combined regional Swiss ingredients with international influences.

Lobster and short ribs in First Class
First Class includes shrimp salad with spicy corn soup and Catalan fish soup with mussels and red snapper.
Main courses include short ribs bourguignon with truffled parsnip puree and lobster and scallops with beurre blanc on goat cheese. Desserts include caramel flan with caramelized popcorn and espresso ice cream.
Business Class includes smoked salmon tartare with Andalusian gazpacho and kimchi mayonnaise. Main courses include short ribs with Anna potatoes and hake with green sauce, fried rice and furikake. Pistachio tarte with berries is on the dessert menu.
Swiss even in Premium Economy
Premium Economy is also included in the new menu, with a clearer emphasis on Swiss dishes and products.
Passengers can choose from a selection of dishes including ”Fleischvogel”, a vegetable-filled nut roll served with polenta and glazed chestnuts. SWISS also offers regional cheeses from Schaffhausen and chestnut cake with vanilla cream.
The new menu will be served on SWISS long-haul flights from Switzerland from September 2 and for the following three months.
