
Sweden received three new Michelin-starred restaurants when the French Michelin Guide presented this year's restaurant guide for the Nordic countries at a gala in Stavanger, Norway, on Monday evening. Among the winners was Knystaforsen in Halland, which received Di Weekend's Destination of the Year award 2021.
Knystaforsen was also awarded a green star for its sustainable gastronomy. With this, Halland now has two rurally located starred restaurants. There is already Äng på Ästad winery, which received a Michelin star last year.
”It's super fun and we were certainly a bit surprised,” says Eva Tram, who runs Knystaforsen together with her husband Nicolai Tram, on site in Stavanger.
”We knew they had visited us, because Michelin recently published an article on their website where we were mentioned as a new restaurant.”
Knystaforsen opened in the middle of the pandemic, in January 2021, and was reviewed last fall in Di Weekend with a high score of 23 out of 25. This led to the restaurant being awarded the Destination of the Year 2021 award.
”"There is no doubt that that award had a very big impact," Eva Tram answers the question of how French Michelin found its way to the forests of Halland on the border with Småland.
The other two new star restaurants – Adam/Albin and Nour – are located in central Stockholm.
Adam/Albin is run by Adam Dahlberg and Albin Wessman and opened six years ago, in 2016. Ever since then, the restaurant has been tipped to receive a star, an award that has been long overdue.
Sayan Isaksson's Nour has opened and closed and reopened during the pandemic. The restaurant is ranked highest on Di Weekend's list of current restaurant tests with 23 points, of which the maximum ten points are for the food.
On stage at the Stavanger Concert Hall was Sayan Isakssons with his daughter Nour, after whom the restaurant is named. The couple Eva and Nicolai Tram were also there, accompanied by their children, two sons, who were in the spotlight on stage.
Among the Swedish restaurants that were awarded in Stavanger was Oxenstiernan, led by chef Elvira Lindqvist, who received a green star for her sustainability work.
No Swedish restaurant lost its star.
